Making Melona Mochi is easier than you think! I didn't believe it until I made them myself, and yes - it's only 2 INGREDIENTS. Use this hack to roll these fruity, chewy, satisfying treats with ANY Melona Bars and sweet rice flour - it's THAT simple.
Unwrap Melona bars and allow them to melt in a glass or bowl. You can leave them on counter a few hours ahead of time to fully melted, or simply use the microwave.
For best results, weigh the melted Melona liquid on a kitchen scale. The ratio is 2:3 flour-to-liquid, so you can determine how much flour is needed. This way, you can adjust amount of flour regardless of how much melted Melona you yielded after melting the frozen bars. For example, if your melted Melona weighs 75 ml, you will need 50g of flour. If Melona weighs 3oz, you will need 2oz of flour.
Combine and stir melted Melona and flour in a large microwave-safe bowl. Cover with cling wrap and poke holes a few times with a fork. Microwave for 2 minutes. Uncover, stir with a rubber spatula, cover, and microwave for 2 additional minutes.
3 Melona Bars, 1 cup +2 tablespoon Glutinous Rice Flour
Continue to knead in bowl with a spatula - mochi will be VERY HOT! You can drizzle a small amount of oil onto your work surface and hands if extremely sticky, and knead by hand.
Stretch and fold until mochi is bouncy and smooth. Divide and roll into equal balls, approx 30g each. Enjoy as is, or griddle on greased waffle iron to make mini mochi waffles.
