Then I saw a girl on TikTok (I can't seem to find the original creator, sorry!) making a goat cheese tray for a party using sweet jam and sprinkle of herbs to balance it out, and it looked amazing. I immediately drove to the store and tried making my own party platter.

You can prep the goat cheese and jam spread ahead of time and store in airtight container in the fridge until you're ready to assemble. Take it out of the fridge 15 minutes prior so it's easy to spread. Once assembled, these crostini are best enjoyed same day. Hello - I have found that flavor of goat cheese to be a bit 'goaty' for my liking, BUT - if I take the log and slice it into 'coins' (can use dental floss rather than a knife), lay them onto a parchment tray, and freeze them - they mellow beautifully and become so nice! Just use the slices as needed for whatever recipe...
