Skillet Baked Brie - what is it, you ask? It's a warm, gooey wheel of creamy brie baked in a cast iron skillet, topped with sweet honey, crunchy chopped hazelnuts, fresh blackberries, sprigs of rosemary, and flaky sea salt. Serve it with crisp baguettes, buttery crackers, or even sliced apples, and you have yourself the most delicious unique cheese dish. It's the perfect appetizer to serve at small parties, a cozy girls' night in, or my personal favorite - “girl dinner.”

Baked brie definitely had a moment the last two years! Usually we find brie served along charcuterie boards, but people were serving this cheese warm and absolutely loving it. Alexa Santos shared this combo of fruits, chopped nuts, and rosemary, and I was absolutely inspired to try recreate it!

Why You Will Love This Skillet Baked Brie
- Easy to customize: Substitute your favorite camembert cheese if you prefer it over brie. Use almonds or walnuts instead of hazelnuts, and cranberries, peaches, figs, or cherries in place of blackberries. I love using baguettes, but feel free to serve it with crackers or even sliced apples.
- Recipe comes together in one pan: Everything is served in the cast iron skillet, just have baguettes or crackers ready to go.
- Ready in 20-25 minutes: Give it a quick head start on the stove, then let the oven do the rest.

Notes About A Few Ingredients
- Brie: Use your favorite type of brie or brie-style cheese that has a bloomy rind - double cream, camembert, or goat brie. I find tripe brie to be a little too rich, but feel free to add if you love it decadent. I usually stick to a French double cream brie I find at Trader Joe's or Président that's available at most grocery stores.
- Honey: Sweet subtle coating for the fruits and toasted hazelnuts.
- Hazelnuts: Chopped almonds or walnuts work just as great.
- Fresh rosemary: Just a few sprigs adds a vibrant pine-like scent aroma. If using dried herbs, add sparingly.
- Fresh blackberries: Using cranberries, peaches, blueberries, figs, or cherries instead will also be delicious.
- Flaky sea salt: Enhances the flavors and contrasts the sweetness of the honey.
How To Make Skillet Baked Brie

Score brie with a sharp knife w/out removing the rind. Be sure not to slice all the way through.

Spread honey on scored side.

Heat pan and add oil. Place brie honey-side down and char undisturbed for 1-1:30 mins.

Carefully lift off pan and set brie aside.

Add honey, then chopped hazelnuts, rosemary, salt, and blackberries.

Stir until hazelnuts and blackberries are evenly coated with honey.

Add brie in the middle and transfer pan to preheated oven.

Bake 10-12 mins uncovered until brie starts to melt and fruit has softened.

Scoop blackberries and nuts on top the brie (optional).

Serve skillet. Enjoy with crackers or toasted baguette.
Suzy's Tips For Success
- Use the right pan: A seasoned cast-iron skillet works great, or all-metal or enamel (ceramic) coated pan. We want one that goes stove-to-oven safely.
- Avoid scoring brie wheel all the way through: To keep cheese intact, score slits in brie only ¾ of the way down. This will help you lift it off the pan after browning in one piece.
- Avoid over-cooking the fruit: Once you stir and have coated the nuts and fruits with honey, add the brie and transfer it into the oven. This will prevent mushy fruits and excess fruit juices.
Best Way To Store/Reheat Baked Brie
Once brie is mixed with the fruit, it's best to enjoy immediately. If you serve the brie separate, you can store in airtight container in fridge for up to 3 days. To reheat the brie, bake in oven at 350ºF for 10 minutes.

You can use any pan that can be used safely from the stove straight into the oven. Search in your cabinet for any cookware that is entirely metal or made with enamel ceramic coating.
