Yes, the good ol' 2020 quarantine days when many of us were still spending quiet nights at home and scrolling Tiktok or Instagram to find simple lazy (yet delicious) dinner ideas. There are MANY instant ramen "hacks" circulating around social media, I bet you've seen a few! Well, I'm here to tell you I narrowed it down for you - I tried quite a lot of them! So trust me when I say this super simple recipe will not only elevate your next ramen bowl in 10 minutes, but you may be turning on your stove to make another bowl sooner than you think.

As you can see from the photo, we are turning our beloved soup-based Shin Ramyun into a delicious broth-less bowl, infused with garlic oil and heat from the noodle seasoning packet. Now I love me a good spicy ramen soup, but this saucy version is BOMB.

What Ingredients Do I Need?
- Nongshim Shin Instant Noodle Soup: Feel free to use any soup-based ramen that includes a dry seasoning pack.
- Garlic: I feel garlic is an ingredient you can always add more than what's indicated in the recipe, so feel free to do so here .I do it, how about you?
- Green onions: Chopped. Reserve some for garnish.
- Sesame seeds: Classic or black.
- Oil: You will see me say neutral oil a lot on this site. Neutral oil is any cooking oil that has very little to no flavor - vegetable, canola, avocado, grapeseed, sunflower, or safflower oil. Olive oil (EVOO), sesame, or coconut oil is not considered a neutral oil.
- Fried egg: Optional topping, but always recommended.
How Does This Shin Ramyun Garlic Oil Hack Come Together?

Combine ramen seasoning packet, dried veggie packet (if included in ramen pack), garlic, green onions, and sesame seeds in a medium bowl.

Heat oil in small saucepan on medium heat. Test oil with a wooden chopstick. It is ready when you see bubbles appear.

Pour hot oil over aromatics. Be cautious as it sizzles. Stir and set aside.

Cook noodles al dente according to package instructions. Combine with garlic chili oil.

Mix until noodles are evenly coated.

Enjoy with fried egg and more green onions!
Suzy's Tips For Success
- Avoid overcooking your noodles: No one likes mushy overcooked ramen. Cook according to package instructions, or if you're like me, I shave off about 30 seconds so I know the noodles will be perfectly chewy.
- Don't leave stove when heating your oil: It'll heat up pretty quickly! If it starts to smoke, it will be left with a bitter flavor.
- Use only ½ the spice seasoning packet if you find Shin Ramyun spicy: If you're like me and your spice tolerance is not what it used to be, adjust by adding only part of the ramen seasoning pouch.
- Level it up: It's perfect to enjoy with leftover dumplings, any cooked protein, or extra steamed veggies.
Best Way To Enjoy Shin Ramyun with Garlic Oil
As most ramen, this is best enjoyed immediately. Instant noodles tend to swell up even after sitting for too long, so I do not recommend storing for later, reheating, or making it in advance.

Of course! Use any ramen brand that includes a soup seasoning packet.
The complicated answer is no. You can definitely substitute the ramen noodles for rice noodles, or even gluten-free pasta. However, I'm quite sure the seasoning packet contains soy. You could replace it with other classic chili flakes or Korean gochucharu, but now we've veered way off course. Perhaps then you can save the Shin Ramyun Noodle packet for your non gluten-free friend to enjoy later, and we can find you a more suitable spicy gluten-free rice noodle bowl.
It is spicy! So feel free to adjust and add ½ the packet.
